6 eggs
6 tbsp honey
4 tbsp coconut oil
4 tbsp coconut milk
1/2 tsp salt
1/2 tsp vanilla
1/2 tsp baking powder
1/2 cup coconut flour
1 cup chopped pecans (optional)
1 cup unsweetened flaked coconut – shredded for small cups (optional)
Preheat oven to 400º
Mix together eggs, honey, coconut oil, coconut milk, salt, and vanilla (coconut oil
will mix better if melted just before putting into mix)
In a separate bowl, sift together flour and baking powder.
Combine with the wet ingredients
Optional: Fold in the coconut flakes and chopped pecans
Divide batter into 12 muffin baking cups.
Bake for 15 minutes.
