Honey Mustard Vinaigrette

Ingredients

1 1/3 cups cider vinegar

1 1/3 cups Dijon mustard (mild)

1 1/3 cups honey

3 1/2-4 cups light oil

Sea salt (to taste)

Pepper

Directions

Whisk together the vinegar and mustard in a mixing bowl (or your food processor). You can adjust the vinegar as desired. If you prefer less tart dressing, slightly reduce the amount of vinegar and increase the mustard.


To make a smaller amount use this ratio: Combine equal portions of vinegar, honey and mustard.

Say, Y3 cup of each. These combined equal 1 cup.


Whisk in the same amount of oil, which would be 1 cup of oil.


Use honey mustard vinaigrette on a Cajun spiced chicken salad or as a non creamy coleslaw dressing.
